A Surinamese dish featuring spiced vegan chicken, long beans, potatoes, and egg in a rich masala sauce, served with soft roti pancakes. Spicy, savory, and full of flavor.

Ingredients

  • 4 pcs
    potatoes (waxy)
  • 4 pcs
    roti flatbread
  • 4 pcs
    eggs
  • 300 g
    vegan chicken
  • 400 g
    yardlong beans
  • 1 pcs
    vegetable stock
  • 4 slice
    garlic
  • 2 pcs
    onion
  • 4 pcs
    tomatoes
  • 5 tbsp
    curry massala
  • 1 tsp
    trassi
  • 1 pcs
    madame jeanette pepper

Instructions

  1. 1Peel the potatoes and cut them into large chunks. Boil them in lightly salted water until tender, drain, and set aside.
  2. 2Hard-boil the eggs for 8–10 minutes, rinse them under cold water, peel them, and set them aside.
  3. 3Slice the onions into half-rings and finely chop the garlic. Dice the tomatoes and cut the long beans into pieces about 4–5 cm long.
  4. 4Heat oil in a large pan. Sauté the onion and garlic together with the trassi and the whole Madame Jeanet (leave it whole for flavor; remove it later).
  5. 5Add the diced tomatoes and cook until they break down.
  6. 6Next, add the curry masala and sauté briefly to bring out the flavors.
  7. 7Add the vegan chicken and brown it on all sides. Then add the potatoes along with the vegetable bouillon (crumbled) and a splash of water. Let it simmer gently for 10 minutes.
  8. 8Add the long beans and let them cook for another 10–15 minutes until everything is tender. Add extra water if needed to make a creamy sauce.
  9. 9Add the hard-boiled eggs at the end of the cooking time so they warm up in the sauce. Remove the Madame Jeanet if you don't want it to be too spicy.
  10. 10Heat the roti pancakes in a dry pan or in the microwave.
  11. 11Serve the roti with a generous spoonful of the chicken-potato-vegetable mixture and one egg per person.
