A traditional Moroccan tagine with artichokes, peas, and vegetable chunks, slowly cooked in a fragrant sauce made with herbs, saffron, and olives.

Ingredients

  • 650 g
    garden peas
  • 6 pcs
    artichoke
  • 1 pcs
    onion
  • 4 slice
    garlic
  • 100 g
    cooking olives
  • 4 tbsp
    olive oil
  • 1 tsp
    salt
  • 1 tsp
    ginger powder
  • 1 tsp
    turmeric powder
  • 1 pcs
    saffron (cube)
  • 3 pcs
    cilantro
  • 300 g
    plant-based stew pieces

Instructions

  1. 1Finely chop the onion and slice or chop the garlic.
  2. 2Heat the olive oil in a pressure cooker and sauté the onion and garlic until they are translucent.
  3. 3Add the salt, ginger powder, turmeric powder, and the cube of saffron. Stir well.
  4. 4Add enough water so that the ingredients are just covered (slightly above the level of the vegetables).
  5. 5Close the pressure cooker and cook this base flavor for 25 minutes.
  6. 6Carefully open the pot and add the peas, the chopped artichokes, and the vegetable chunks.
  7. 7Add the cooked olives for extra flavor.
  8. 8Close the pressure cooker again and cook for another 5 minutes until the vegetables are tender.
  9. 9Check to see if the artichokes are done. If they're already cooked but the sauce is still too thin, remove the artichokes and let the sauce reduce to the desired thickness.
  10. 10Coarsely chop the cilantro and sprinkle it over the tagine just before serving.
  11. 11Serve warm, perhaps with couscous or fresh bread.
