A classic Moroccan dish featuring sweet plums, warm spices, and savory vegetable chunks. This tagine deliciously combines sweet and savory flavors and is perfect for a festive meal.

Ingredients

  • 1 pcs
    onion
  • 4 slice
    garlic
  • 2 tbsp
    olive oil
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 1 tsp
    ginger
  • 1 tsp
    turmeric powder
  • 1000 ml
    water
  • 300 g
    prunes
  • 400 g
    plant-based stew pieces
  • 1 pcs
    saffron (fresh)
  • 2 tbsp
    honey

Instructions

  1. 1Soak the dried plums (300 g) in warm water for 1 to 2 hours to soften them.
  2. 2Finely chop the onion and slice the garlic.
  3. 3Heat 2 tablespoons of olive oil in a pressure cooker over medium heat.
  4. 4Sauté the onion and garlic until they are translucent.
  5. 5Add salt, black pepper, ginger, turmeric powder, and saffron to the onion mixture and stir well.
  6. 6Add about 1,000 ml of water, so that all the ingredients are well submerged.
  7. 7Close the pressure cooker and cook for 25 minutes.
  8. 8Add the soaked prunes and 2 tablespoons of honey to the pan.
  9. 9If there is still enough liquid in the pot, close the pressure cooker again and cook for another 5 minutes.
  10. 10If there is too much liquid, cook without a lid until the liquid has thickened slightly.
  11. 11Then add the vegetable chunks to the pan.
  12. 12Let the mixture simmer gently and reduce the liquid until a nice, thick sauce forms.
  13. 13Serve the tagine warm, garnished with sesame seeds or almonds if desired, and with bread or couscous.
