A fragrant Moroccan couscous dish with braised vegetables, chickpeas, raisins, and warm spices. Can be prepared with or without a pressure cooker.

Ingredients

    tomatoes

    onion
  • 1 tbsp
    ginger
  • 50 g
    cilantro
  • 50 g
    parsley
  • 265 g
    chickpeas
  • 150 g
    raisins
  • 1 cup
    vegetable stock
  • 250 g
    carrots
  • 250 g
    zucchini
  • 250 g
    butternut squash
  • 250 g
    sweet potato
  • 2 tbsp
    olive oil
  • 1 tsp
    turmeric powder
  • 2 tsp
    sweet paprika powder
  • 1 tsp
    ground cumin
  • 2 tsp
    salt
  • 1 tsp
    black pepper
  • 1 tbsp
    butter
  • 500 g
    couscous
  • 100 g
    spicy olives

Instructions

  1. 1Chop the onion and dice the tomatoes into small cubes. Peel and cut the carrots, zucchini, butternut squash, and sweet potato into large chunks.
  2. 2Finely chop the cilantro and parsley. Set some aside for garnish.
  3. 3Heat the olive oil in a large pot (or pressure cooker, if using) and sauté the onion and ginger until translucent.
  4. 4Add the tomatoes, turmeric powder, paprika, cumin, salt, and pepper. Let it cook gently for 5 minutes.
  5. 5Add the chickpeas, raisins, and chopped vegetables to the pressure cooker. Pour in the vegetable broth until everything is just covered.
  6. 6Close the pressure cooker and bring it to pressure. Cook for 15 minutes starting from the moment the cooker begins to whistle.
  7. 7Carefully open the pot and check to see if the vegetables are cooked. If the sauce is too thin, let it simmer a little longer without the lid.
  8. 8If you don't have a pressure cooker, add the chickpeas, raisins, and vegetables to a deep pot. Pour in the broth until the vegetables are just covered.
  9. 9Bring to a boil, cover with a lid, and let simmer gently for 30–40 minutes until the vegetables are tender. Stir occasionally and add a little extra water if necessary.
  10. 10Meanwhile, prepare the couscous: place the couscous in a large bowl. Add a pinch of salt and pour boiling water over it (about 1.5 times the volume of the couscous). Cover and let stand for 10 minutes.
  11. 11Fluff the couscous with a fork and stir in the butter.
  12. 12Just before serving, add half of the cilantro and parsley to the braised vegetables. Stir well.
  13. 13Serve the couscous on a platter with the vegetables and sauce poured over it.
  14. 14Garnish with spicy olives and the remaining cilantro and parsley. Serve warm.
