A colorful and nutritious salad with quinoa, roasted vegetables, and fresh herbs—perfect for lunch or a light meal.

Ingredients

  • 2 pcs
    bell pepper
  • 1 pcs
    zucchini
  • 3 pcs
    spring onion
  • 200 g
    quinoa
  • 150 g
    olives (kalamata)
  • 10 g
    mint
  • 10 g
    cilantro
  • 10 g
    parsley
  • 200 g
    arugula mix
  • 1 pcs
    lemon
  • 1 tbsp
    olive oil
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 200 g
    cherry tomatoes

Instructions

  1. 1Cook the quinoa according to the instructions on the package. Let it cool to room temperature.
  2. 2Preheat the oven to 200°C. Dice the bell pepper and zucchini and spread them out on a baking sheet lined with parchment paper. Drizzle with a little olive oil. Roast for 20–25 minutes until golden brown and tender.
  3. 3Slice the green onion into thin rings and cut the cherry tomatoes in half.
  4. 4Finely chop the mint, cilantro, and parsley.
  5. 5Put the cooled quinoa in a large bowl. Add the roasted vegetables, scallions, cherry tomatoes, olives, and chopped herbs.
  6. 6Add the arugula mix to the bowl and toss everything together.
  7. 7Squeeze the lemon and mix the juice with a tablespoon of olive oil. Season with salt and pepper.
  8. 8Pour the dressing over the salad and toss well.
  9. 9Serve immediately or let it sit in the refrigerator for a while to let the flavors develop.
