    apple
  • 400 g
    carrots
  • 400 g
    beets
  • 150 g
    walnuts
  • 100 ml
    plant-based yoghurt (unsweetened)
  • 1 pcs
    belgian endive
  • 1 pcs
    lemon
  • 200 g
    spinach (fresh)
  • 200 g
    celery
  • 1 tsp
    salt
  • 1 tsp
    black pepper

Instructions

  1. 1Peel the carrots and grate them coarsely.
  2. 2Dice the apple and the beets.
  3. 3Cut the celery and chicory into thin strips. Cut or tear the spinach leaves into bite-sized pieces.
  4. 4Chop the walnuts coarsely.
  5. 5In a large bowl, mix the yogurt with salt, pepper, and the juice of the lemon to make a dressing.
  6. 6Add the grated carrot, beets, apple, celery, endive, and spinach to the bowl.
  7. 7Toss everything well so that the dressing is evenly distributed.
  8. 8Garnish the salad with the walnuts just before serving for an extra crunch.
