A nutritious and deliciously sweet banana bread with no refined sugars. Made with rolled oats, dates, and blueberries—perfect for breakfast, a snack, or a healthy treat.

Ingredients

Amounts for 12 servings

  • 200 g
    rolled oats
  • 3 tsp
    cinnamon powder
  • 1 tsp
    salt
  • 200 g
    dates
  • 100 ml
    oat milk
  • 2 pcs
    banana
  • 100 g
    blueberries
  • 1 tsp
    baking soda
  • 1 tbsp
    apple cider vinegar

Instructions

  1. 1Preheat the oven to 180 degrees Celsius. Line a cake pan with parchment paper or grease it.
  2. 2Grind the rolled oats in a food processor until they become a fine flour. Mix this with the salt and cinnamon in a large bowl.
  3. 3Cut the dates into small pieces and blend them with the oat milk until smooth.
  4. 4Mash the bananas in a separate bowl.
  5. 5Mix the date mixture with the oat flour, then stir in the mashed banana until a smooth batter forms.
  6. 6Add the blueberries to the batter and stir gently.
  7. 7In a small bowl, mix the baking soda with the apple cider vinegar. Immediately stir this effervescent mixture into the batter.
  8. 8Pour the batter into the cake pan and bake for 45 minutes in the preheated oven. Use a skewer to check if the bread is done.
  9. 9Let the banana bread cool in the pan before slicing it. Serve as a healthy snack or for breakfast.
