Delicious and healthy breakfast burritos. You can also freeze them so you can grab a healthy, protein-packed breakfast anytime.

Ingredients

Amounts for 6 servings

  • 200 g
    grated cheese
  • 2 tbsp
    jalapeno
  • 300 g
    potatoes (waxy)
  • 400 g
    black beans
  • 4 pcs
    tomatoes
  • 1 pcs
    onion
  • 15 g
    cilantro
  • 6 pcs
    wraps (large)
  • 20 ml
    hotsauce
  • 1 pcs
    zucchini
  • to taste
    ground cumin
  • to taste
    smoked paprika
  • to taste
    salt
  • to taste
    black pepper
  • 2 tbsp
    olive oil
  • 30 g
    tomato paste
  • 1 pcs
    lime
  • 6 pcs
    eggs
  • 3 pcs
    avocado

Instructions

  1. 1Finely chop the tomatoes, onion, and cilantro. Mix them together in a bowl and set aside.
  2. 2Beat the eggs together with salt and pepper in a bowl. Scramble them in a pan with a little olive oil. Set aside.
  3. 3Drain and rinse the beans. Cut the zucchini into small cubes. In a preheated pan, add the beans, zucchini, tomato paste, ground cumin, smoked paprika, salt, and pepper (to taste). Sauté/heat. Cut the potatoes into small cubes (0.5 cm) and sauté them in the pan with a little oil.
  4. 4Turn the avocado into guacamole by mashing it with some lime juice. Add salt and pepper to taste.
  5. 5To fill the wraps: lightly moisten a wrap. Fill it with the bean mixture, eggs, tomato mixture, guacamole, some cheese, and hot sauce to taste. Add jalapeños and cilantro if desired. Roll it up carefully.
  6. 6To eat right away: Cook the wraps in a dry, hot pan on both sides until they’re golden brown. You can also freeze the wraps (they’ll keep for 3–6 months; wrap them individually in plastic wrap). When you’re ready to eat them: remove them from the freezer, take off the plastic wrap, and microwave them in a damp paper towel for 2–3 minutes. Then fry them in a pan until golden brown.
