A colorful and filling burrito bowl with rice, seasoned beans, vegetables, ground meat, and fresh toppings. Everything you love about a burrito, but in a bowl!

Ingredients

Amounts for 4 servings

  • 1 cup
    rice
  • 100 g
    corn kernels
  • 2 pcs
    bell pepper
  • 100 g
    iceberg lettuce
  • 1 pcs
    avocado
  • 100 g
    plain nachos
  • 100 g
    cilantro
  • 100 g
    cherry tomatoes
  • 30 g
    red onion
  • 2 tbsp
    hotsauce
  • 400 g
    black beans
  • 1 tbsp
    tomato paste
  • 1 tsp
    ground cumin
  • 1 tsp
    smoked paprika
  • 100 g
    cheese
  • 250 g
    vegan crumbled mince
  • 1 tsp
    worcestershire sauce(optioneel)

Instructions

  1. 1Cook the rice according to the instructions on the package. Set it aside and keep it warm.
  2. 2Dice the bell peppers, cut the cherry tomatoes in half, slice the red onion into thin rings, and cut the iceberg lettuce into strips.
  3. 3Dice the avocado and coarsely chop the cilantro.
  4. 4Heat a little oil in a pan and cook the ground meat until it's golden brown.
  5. 5Add the tomato paste, Worcestershire sauce, ground cumin, and smoked paprika to the ground meat. Stir well and cook for 3–4 minutes.
  6. 6Briefly heat the black beans and corn kernels in a separate pan, adding a little oil and salt if desired.
  7. 7Divide the rice among four bowls to serve as a base.
  8. 8Spoon the ground meat, black beans, corn, bell peppers, tomatoes, red onion, iceberg lettuce, and avocado on top in sections.
  9. 9Sprinkle the grated cheese and chopped cilantro over the bowls.
  10. 10Drizzle with hot sauce to taste.
  11. 11Serve with plain nachos on the side or crumbled on top for extra crunch.
