A classic Italian pasta dish with a creamy sauce made with eggs and Parmesan cheese, combined with crispy fried bacon bits. Simple, quick, and full of flavor.

Ingredients

  • 500 g
    spaghetti
  • 4 pcs
    eggs
  • 150 g
    parmesan cheese
  • 200 g
    bacon bits
  • 1 tbsp
    butter
  • 1 tsp
    black pepper
  • 1 tsp
    salt
  • 1 tbsp
    olive oil

Instructions

  1. 1Cook the spaghetti in plenty of salted water according to the package directions. Drain and reserve one cup of the cooking water.
  2. 2In a large skillet, cook the bacon in butter and olive oil over medium heat until it is golden brown and crispy. Then reduce the heat to low.
  3. 3In a bowl, beat the eggs and mix in the grated Parmesan cheese and black pepper. Set aside.
  4. 4Add the cooked spaghetti to the pan with the bacon bits. Remove the pan from the heat so the sauce doesn't set later.
  5. 5Pour the egg mixture over the warm pasta and stir well right away so that the sauce becomes creamy and the eggs don't curdle.
  6. 6If desired, add a splash of the reserved pasta water to make the sauce thinner and glossier.
  7. 7Season with extra black pepper and salt to taste, if desired.
  8. 8Serve immediately, optionally with extra grated Parmesan cheese on top.
