Delicious wraps filled with crispy falafel, roasted vegetables, fried eggplant slices, and a spicy bean-and-tomato mixture. Topped with a refreshing tahini-yogurt sauce—perfect for lunch or a light meal.

Ingredients

  • 4 pcs
    wraps (large)
  • 1 pcs
    eggplant
  • 2 pcs
    bell pepper
  • 1 pcs
    onion
  • 1 pcs
    zucchini
  • 1 pcs
    arugula mix
  • 1 pcs
    cherry tomatoes
  • 400 g
    kidney beans
  • 100 ml
    plantaardige yoghurt (ongezoet)
  • 250 ml
    tahini
  • 1 pcs
    lemon
  • 1 slice
    garlic
  • 300 g
    falafel

Instructions

  1. 1Preheat the oven to 200°C. Cut the bell pepper, zucchini, and onion into strips or cubes.
  2. 2Place these vegetables on a baking sheet lined with parchment paper, drizzle with olive oil, season with salt and pepper, and roast them in the oven for 25–30 minutes until they are golden brown and cooked through.
  3. 3Slice the eggplant into slices about 1 cm thick. Heat a pan with a splash of olive oil and fry the eggplant slices on both sides until golden brown and tender. Drain on paper towels and sprinkle lightly with salt.
  4. 4Rinse the kidney beans and place them in a blender or food processor along with the halved cherry tomatoes. If desired, add a small splash of lemon juice, salt, and pepper. Blend until you have a coarse, creamy mixture.
  5. 5Heat some oil in a pan and sauté the bean-tomato mixture for a few minutes over medium heat until it thickens slightly and is heated through. Set aside.
  6. 6Fry or bake the falafel in a pan with a little oil or in the oven, according to the package instructions, until they are golden brown and crispy.
  7. 7Make the sauce: Mix the tahini with the yogurt, lemon juice, finely chopped garlic, a pinch of salt, and a splash of water until you have a creamy sauce. Add more water if needed to achieve the desired consistency.
  8. 8Briefly heat the wraps in a dry pan or in the microwave to make them pliable.
  9. 9Top each wrap with a layer of the warm kidney bean mixture, some arugula, roasted vegetables, falafel, and a few slices of fried eggplant.
  10. 10Drizzle generously with the tahini-yogurt sauce.
  11. 11Roll the wraps up tightly and serve immediately.
