A snack made with red lentils, spinach, and feta. A twist on the classic spanakopita or börek. Flour-free, gluten-free, and high in protein.

Instructions
1Soak the dried red lentils for at least 4 hours or overnight in the refrigerator. Rinse the soaked lentils and drain them thoroughly.
2Meanwhile, in a bowl, mix the squeezed spinach with the chopped onion, feta, 2 tablespoons of olive oil, dill, and pepper until smooth. Set aside.
3Puree the drained lentils with the cottage cheese, eggs, 3 tablespoons of olive oil, salt, and pepper until smooth. Then briefly stir in the baking powder and mix one last time.
4Line a 20x20 cm baking pan with parchment paper. Spread 2/3 of the lentil batter over the bottom. Spread the spinach mixture evenly over it and cover with the remaining batter.
5Sprinkle with sesame seeds to taste.
6Bake at 185 degrees Celsius for about 45 minutes, until golden brown. Let it cool slightly before slicing and serving.
