A delicious main course with roasted vegetables and spicy portobello mushrooms.
Ingredients

potatoes (waxy)

green asparagus

Instructions
1Peel the potatoes if desired and cut them into equal-sized pieces. Boil them in salted water for 15–20 minutes until tender. Drain and keep warm.
2Preheat the oven to 200°C. Clean the portobello mushrooms and cut them into strips about 1 cm wide. Gently coat the strips with olive oil and Cajun seasoning. Place them on a baking sheet lined with parchment paper. Bake the portobello mushrooms in the oven for 20–25 minutes, turning them halfway through.
3Slice the zucchini and trim the woody ends off the green asparagus. Grill the vegetables for 3–5 minutes until they are al dente.
4Roast the vegetables and portobello mushrooms in the oven for 20–25 minutes, until they are golden brown and cooked through.
5Cut the red onion in half and slice it into thin rings.
6Coarsely chop the almonds and toast them briefly in a dry skillet until they are light brown and fragrant.
7Bring the gravy to a boil over low heat and keep it warm.
8Mix the lemon juice, mustard, and a tablespoon of olive oil. Toss this dressing with the roasted vegetables, red onion, and almonds.
9Divide the boiled potatoes and roasted vegetables among the plates. Place the portobello mushrooms on top of the potatoes as "steaks."
10Spoon the gravy over the portobello mushrooms and potatoes.
11Serve immediately.
