A quintessentially Dutch winter classic: creamy mashed potatoes mixed with cooked kale, seasoned with mustard and nutmeg, and served with gravy, applesauce, and a hearty meat substitute.

Ingredients

  • 1500 g
    potatoes (waxy)
  • 600 g
    kale
  • 1 tbsp
    mustard
  • 40 g
    butter
  • 150 ml
    oat milk
  • 1 tsp
    black pepper
  • 2 tsp
    salt
  • 1 tsp
    nutmeg
  • 1 pcs
    applesauce
  • 1 pcs
    gravy
  • 4 pcs
    vegetarian meat (kale stew)

Instructions

  1. 1Peel the potatoes and cut them into equal-sized pieces. Place them in a large pot with a little water.
  2. 2Add the kale on top of the potatoes. Add a pinch of salt.
  3. 3Bring the mixture to a boil and let it simmer for 20–25 minutes until the potatoes and kale are tender.
  4. 4Drain off the excess cooking liquid, but set aside a small amount for mashing.
  5. 5Add the butter, oat milk, mustard, black pepper, and nutmeg to the pan.
  6. 6Mash everything into a creamy stew. If necessary, add extra milk or cooking liquid to make it creamier.
  7. 7Meanwhile, cook the meat substitutes in a separate pan according to the instructions on the package.
  8. 8Heat the gravy and applesauce separately.
  9. 9Serve the kale stew with the meat substitute, a spoonful of gravy, and a scoop of applesauce on the side for a classic plate of comfort food.
