A flavorful Indonesian rice dish made with fried rice, vegetables, tempeh, and spices. Served with satay sauce, cucumber, and crispy shrimp crackers for a complete meal.

Ingredients

  • 400 g
    rice
  • 2 tbsp
    sweet soy sauce (ketjap)
  • 4 pcs
    eggs
  • 600 g
    stir-fry vegetables (bami/nasi)
  • 250 g
    tempeh
  • 250 ml
    satay sauce
  • 200 g
    pickled cucumber
  • 1 pcs
    prawn crackers
  • 1 pcs
    onion
  • 2 slice
    garlic
  • 1 tsp
    sesame oil
  • 1 tbsp
    ginger
  • 1 tsp
    trassi
  • 1 tsp
    ground coriander
  • 1 tsp
    sambal oelek

Instructions

  1. 1Cook the rice a day in advance or at least a few hours in advance. Let it cool completely so the grains are loose.
  2. 2Chop the onion and mince the garlic. Cut the tempeh into small cubes.
  3. 3Heat some oil in a large wok or skillet. Fry the tempeh until golden brown and crispy. Remove from the pan and set aside.
  4. 4Add a little extra oil if necessary. Sauté the onion, garlic, ginger, sambal oelek, ground coriander seeds, and terasi until the mixture begins to release its aroma.
  5. 5Add the stir-fry vegetables and cook for 5–7 minutes until tender.
  6. 6Add the cooled rice to the pan. Cook over high heat, stirring constantly, until everything is well mixed and heated through.
  7. 7Add the soy sauce and sesame oil and stir well. Season to taste with additional sambal or soy sauce, if desired.
  8. 8Meanwhile, fry the eggs in a separate pan as sunny-side-up or scrambled eggs, as desired.
  9. 9Heat the satay sauce in a small saucepan or in the microwave.
  10. 10Serve the nasi goreng with the fried tempeh, a fried egg, satay sauce, pickled cucumber, and a handful of kroepoek on the side.
