A fragrant and creamy curry with bok choy, tofu, and coconut milk. Seasoned with a blend of spices and served with rice and fresh lime. A nutritious and spicy plant-based meal.

Ingredients

  • 400 g
    rice
  • 1 pcs
    tofu
  • 1 pcs
    bok choy
  • 1 pcs
    bell pepper
  • 1 pcs
    onion
  • 3 slice
    garlic
  • 20 g
    ginger
  • 2 tsp
    ground cumin
  • 2 tsp
    currypoeder (heet)
  • 4 tsp
    turmeric powder
  • 2 tsp
    fennel seeds
  • 50 g
    cilantro
  • 400 ml
    coconut milk
  • 100 g
    spring onion
  • 1 pcs
    lime
  • 1 pcs
    broccoli

Instructions

  1. 1Cook the rice according to the instructions on the package. Keep warm until ready to use.
  2. 2Drain the tofu and cut it into cubes. Fry the cubes in a pan with a little oil until golden brown and crispy. Set aside.
  3. 3Chop the onion, and finely chop the garlic and ginger. Cut the bell pepper and bok choy into strips. Cut the broccoli into small florets and the green onion into rings. Coarsely chop the cilantro.
  4. 4Heat oil in a large pan or wok and sauté the onion until translucent. Then add the garlic, ginger, ground cumin, turmeric, fennel seeds, and curry powder. Stir-fry for 1–2 minutes until fragrant.
  5. 5Add the bell pepper and broccoli and sauté for 3–4 minutes. Then add the bok choy and stir-fry for another 2 minutes.
  6. 6Pour in the coconut milk, stir well, and let it simmer gently for 8–10 minutes until the vegetables are tender but still have a little bite.
  7. 7At the end, add the fried tofu and heat it through briefly. Season to taste with salt, pepper, and a little lime juice.
  8. 8Serve the curry in bowls or on plates with the rice on the side. Garnish with scallions, fresh cilantro, and lime wedges.
